Chipotle Wings

T Onion powder

T (3 cloves) garlic

T chipotle in adobo

T melted butter

T Louisiana hot sauce

c balsamic vinegar

c raspberry jelly

Heat oven to 300

Place chicken wings in
a greased pan in a single layer

Pour sauce over wings

Bake 2.5 hours,
turning wings every 20-30 minutes

Wings become very dark
in color
After
having something similar to these in a bar, I wanted to figure out how to make
them at home. I took the method
previously used in teriyaki wings and thought it paired well instead of frying
and saucing. These were very tender and delicious. To make it a dinner, I served with a salad.
This
is a little spicy and a little sweet. A
good pairing for this is a tripel or quadruple.
This has a sweetness that balances and complements well. I have chosen the Golden Monkey from Victory
Brewing Company in Pennsylvania. There
are some notes of clove and banana that can be tasted in sipping the beer.
